Coming at you with a tall glass of sugar free keto refreshment! These keto Italian Cream Sodas are absolutely delightful and a great way to cool off on a hot summer’s day.

They are so light and fizzy, with a sweet homemade raspberry syrup, soda water, and a splash of cream. It’s a little like drinking a melting popsicle with a straw.

And it’s all inspired by my own homegrown berries. We’ve been having quite a bumper crop this year and I’ve been picking one to two pints per day. It’s far more than we can eat.

So I am working on as many keto raspberry recipes as I can think of. And this sugar free Italian Cream Soda is high on my list of tasty ideas. It’s so easy and so refreshing.

What is Italian Soda?

Italian soda is a sweet drink made with carbonated water and flavored syrups. It actually originated in California, but was made famous by the folks behind the Torani syrups. Hence the name Italian soda.

If you add cream, as many versions do, it’s called an Italian Cream Soda. Some people refer to this as French soda.

I personally don’t care what you call it, as long as you call it delicious. And this sugar-free Italian soda is absolutely delicious!

Homemade keto simple syrup

There are plenty of sugar free syrups on the market, including those made by Torani themselves, and you can easily use them in this recipe. So why go to the trouble of making it from scratch?

I have a number of reasons I prefer homemade sugar free simple syrup. For one thing, you control the ingredients. Many syrups use artificial sweeteners and flavors, and those are things I simply prefer to avoid.

There is also a lot to be said for the simple pleasure that comes from creating something with your own hands. I know not everyone feels that way, but I also think many of you understand. Take pleasure in the craft and enjoy the journey.

It’s surprisingly easy. Simple syrup takes only a few minutes to make, and it’s hardly more effort than pouring it from a bottle. I’ve made simple syrup for a few recipes lately, including my keto sweet tea and rhubarb fizz cocktail. I also made a gingerbread version for keto gingerbread lattes.

And if you happen to have an overabundance of fresh berries, as I do this year, purees and syrups are a great way to enjoy them.

Frequently Asked Questions

Can I make these sugar free Italian soda with different flavors?

Yes, you can have fun with it! Try blueberry or strawberry for a delicious flavor twist.

What sweeteners work best?

I find that using half allulose makes the sugar free simple syrup thicker. You can use all allulose or BochaSweet if you prefer. If you use an erythritol based sweetener on its own, it may re-crystallize.

Can I make them dairy free?

Sure, this Italian soda recipe would be great with a dollop of coconut cream.

Can I use storebought syrup?

Of course! As I mention above, sugar free simple syrup is easy to make but if you prefer to use ready made, it will work just as well.
