This Keto Grilled Chicken Mediterranean is loaded with bold flavors and exciting textures. Fresh and light, it’s also extremely satisfying to eat!

Keto Grilled Chicken Mediterranean

I developed this Keto Grilled Chicken Mediterranean recipe years ago for a national recipe contest sponsored by Hungry Girl, and was thrilled when it got to 4th place. Honestly I wasn’t surprised though, because the flavors and textures make this a delicious dish that’s fun to eat.

Add in the fact that it’s low in carbs and super easy to make, and it’s definitely a winner in my book!

mediterranean grilled chicken

I’m always a fan of marinated and grilled chicken – especially on keto because it’s easy and tasty.

Figuring out a keto friendly side dish to my chicken is the challenge, which is why I love this recipe. The super flavorful combo of the artichoke hearts, olives, and pickled peppers and punchy fresh herbs are just the perfect complement to this keto grilled chicken.

Every bite is bliss!

As if you needed more reasons to love this recipe, the veggies that top this grilled chicken are all easily stored in your pantry.

Stock up and you can throw this low carb chicken dinner together at a moment’s notice!

How to make it:

First you’re going to marinate the chicken breasts in a mixture of oil, balsamic vinegar, and some seasonings.

Next you’ll grill (or cook on the stovetop) the chicken.

Finally, we’re topping our keto grilled chicken with a Mediterranean play on salsa, which also was lightly dressed with a simple vinaigrette using oil and balsamic vinegar.

See? Easy.

We loved this very easy and healthy low carb grilled chicken recipe, and ate the leftovers for days. As an added bonus it just got better and better with time!

We later added some feta cheese to it which I’ll list as optional in the recipe, since it’s not in the photos. The feta definitely added another layer of flavor to this keto chicken recipe though, so if there is room for some dairy in your diet, then I highly recommend it!
