With so many cauliflower rice recipes, I still get to enjoy the flavors of my favorite side dishes without the carbs – and this one is no different.

In fact, I love eating this one on Taco Tuesdays (along with Mexican cauliflower rice) and even make up new recipes whenever I just want an excuse to eat it. It has such a zesty and bright flavor.

Whoever put cilantro and lime together for the first time gave this world a gift! You are going to just love how this recipe tastes.

Ingredients Needed For Cilantro Lime Cauliflower Rice

This recipe is naturally low in carbs and uses only a few simple ingredients. All of the exact amounts are in the printable recipe card at the bottom of the post. First, I have some extra information about what I used.

Riced Cauliflower

Save yourself time and just use frozen cauliflower rice that you have thawed. If you have a food processor, you can make your own cauliflower rice out of raw cauliflower.

Oil

I used extra virgin olive oil for this recipe. Other options include coconut oil or avocado oil. Just use your favorite type of oil!

Butter

I used unsalted butter so that I could control the amount of salt in the recipe. If you use salted butter, don’t add any extra salt to it.

Lime

You only need to use the juice from ½ of a lime for the entire recipe. This is equivelent to about a tablespoon of jarred lime juice.

Cilantro

Add as much cilantro as you want! If you don’t like cilantro, you can leave it out.

Sauté The Cauliflower Rice

Before you add the cauliflower to the skillet, heat up the oil. Set your stove to medium-high heat and add the riced cauliflower when the oil is sizzling.

Then, sauté the cauliflower rice until it becomes tender.

Mix In The Lime Juice

Next, add the butter and lime juice to the skillet and stir to mix together. At this point, you can turn the heat down to medium or even medium-low.

Stir everything until it is combined really well.

Top With Cilantro

Towards the end, add the cilantro. I like to add it last because it retains its flavor and stays crispy.
